In my kitchen Steak is usually served with chips, often mushrooms and peas too but always home made chunky chips!
I decided yesterday was going to be a Steak day, mainly because of the crappy day that I had just incurred, if standing in dog shit, burning my hand on the iron, and spilling my lunch down my eBay bargain Ralph Lauren shirt doesn't warrant a Steak dinner than I don't know what will.
So dinner was decided upon around 1 pm, shortly after I finish my lunch; around half an hour after finishing one meal is usually when I begin thinking about the next.
Throughout the afternoon I continue to think about my Steak dinner and somewhere along the way, I begin to feel inspired. Chips and peas just don't make the cut, I crave spice and zest and flavor.
Coriander is my favorite fresh herb and pickled jalapeños can always be found in my cupboard, not least because they make a mean topper for late night chicken kebabs.
Jamie Oliver has a recipe for a Salsa Verde to go with Steak but I didn't have all the correct ingredients so I just used this as inspiration rather than following the recipe.
For my Salsa, I used the following ingredients:
- Rock Salt & Cracked Black Pepper
- Fresh Coriander
- Pickled Jalapeños
- Fresh Garlic (minced)
- Lime Zest & Juice
I quite simply dumped a generous handful of Jalapeños and the same of Coriander on a chopping board and roughly chopped through with a sharp knife.
In a bowl mix together the chopped ingredients with my minced Garlic, S&P and the zest and juice of 1 Lime.
Serve this salsa over a Steak, cooked to your liking. I chose to have mine with stir-fried vegetables, but a peppery salad would work too.
This recipe would be great for a BBQ and could be tweaked to complement most meat or fish.
For instance, if I was making to accompany lamb maybe I would substitute the Coriander for Mint.
I would serve it with fish tacos and add extra Lime juice to give an extra zing.
