WARNING: The following recipe is not diet friendly, it does not contain Quinoa, Kale, Avacado, Aduki Beans or any other superfoods. This is stodgy, feel good recipe suitable your once a month ride on the cotton pony or to be used as a starchy buttery adhesive to mend a broken heart, or just because you have had to endure a whole Monday at work and you have done nothing at all to deserve that kind of torture. The recipe I want to share with you is my favorite comforting food, I have always had a knack for throwing things together in the kitchen. I like to think of myself as a culinary cocktail genius but this one is very much inspired by my partners Mum. She is Irish and as a result of growing up in Ireland, she often cooks with potatoes and thus she makes a mean Bubble & Squeak. My version is slightly altered but I think I do it justice.
Ingredients
- Gammon or Bacon
- Boiled Potatoes
- Cabbage
- Minced Garlic
- Peas
- Diced Onions
- Carrots
- Any other veggies you have lying around
- Butter (proper Butter, vegetable spreads do not count!)
- Egg (optional)
- Salt & Pepper
- If you are using fresh or frozen vegetables rather than leftovers (leftovers are a foreign concept in my kitchen) you will first need to cook them off, boiling them all together in a pan of lightly salted water should do the trick, meanwhile, you can begin to grill your Bacon or Gamon
- Once the vegetables are tender drain them off and mix the boiled potatoes in with them, I find 50/50 vegetables and boiled potatoes to be a good ratio. Keep an eye on your Bacon or Gammon, pulling it out from the grill once cooked to your liking (I prefer mine well cooked!)
- Heat a large knob of butter in a large frying pan, and add the diced onions and Minced Garlic, whilst you let this fry off mix and mash together the boiled vegetables and potatoes, season with salt and pepper to taste.
- Add your potato and vegetable mix to the frying pan and pat it down to a thick pancake and keep frying for around 30 minutes, I like to check every now and again to ensure the bottom isn't burning once the bottom turns golden and crispy flip it, this will not go smoothly but that really doesn't matter just flip it and pat it back down and continue cooking until really crisp all over.
- Slice up and serve with the Gammon or Bacon and I like a fried egg on top. If the Bacon/Gammon has gone cold you could always pop it into the frying pan whilst frying your egg.
So I totally love this recipe, not just because I adore carbs and salty cured meats but because it's so indulgent yet so simple. Okay, so it's not going to make you feel like getting into your lycra and going to do a pilates class but that's okay. Sometimes I eat foods that are packed with nutrition and will fuel my body and other times I eat foods that are packed with butter and potatoes and will fuel my soul other times I eat very little at all in a bid to find my collar bones.
